For salad

1. Mix lime juice with garlic

2. Toss cabbage, red onion, sliced mint and basil leaves with lime mixture, season to taste with salt, then set aside

For fried batter shrimp

1. Peel the prawns leaving tails on, then devein and butterfly

2. Marinate prawn with a pinch of salt

3. Combine flour with lemon herb garlic

4. Dip the prawn in flour to coat two sides of the prawn, shake off any excess flour

5. Plunge the prawns into the egg wash and light crumb with macadamia nuts

6. Lay the crumb prawns on a plate, not overlap

7. Heat the oil in frying pan over medium heat

8. Fry prawns until they are golden brown and crispy

9. Lift out the prawns and lay on kitchen paper

Prepare the sauce, the salad then the prawn. Arrange salad, sauce, four crusted prawns on plates with lime wedges, then sprinkle chopped chili around and serve
