Avocado Yogurt Sauce Ingredients
This sauce is easy to make, try this wonderful creamy sauce to enhance the subtle flavor of prawns
- 1 ripe avocado, peeled stoned and smashed
- 1/3 cup natural yogurt
- 1/2 teaspoon garlic, crushed
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon lime juice.
- 8 large cooked king prawns peeled, leaving the tails on
- 1 mango peeled and thinly sliced
- 1 oz (30 g) mesclun salad
- Juice of 1 lime and some zest
- Sprinkle sea salt
- Cracked pepper
- 10 toasted cashews
- 1/3 teaspoon chopped chili
- 2 lime wedges
- 1 teaspoon chopped coriander
- 2 sprigs coriander
To make the Yogurt Avocado sauce
Put all the ingredients in a bowl and mix until smooth. Season with salt and pepper to taste.
To make the salad
- In a bowl mix cooked prawn with lemon juice, zest, and chopped coriander.
