Instructions

To make the Yogurt Avocado sauce

Put all the ingredients in a bowl and mix until smooth. Season with salt and pepper to taste.

To make the salad

  1. In a bowl mix cooked prawn with lemon juice, zest, and chopped coriander.
  2. Spoon avocado yogurt sauce on a plate. Arrange sliced mango standing on the sauce. Then hang the marinated prawns on the sliced mangoes. Top with a coriander sprig.
  3. Put mesclun salad, lime wedge at the edge of the plate. Sprinkle with chopped chili, cashew nuts. Serve immediately.
