Maple Glaze Apple Pork Ingredients - How To Cook Pork With Maple And Apple
- 2 pieces of pork fillets. About ½ lb (230 g)
- 1 tablespoon wholegrain mustard
- 1 tablespoon olive oil
- ½ cup 125 ml apple juice
- 2 tablespoons maple syrup
- 2 teaspoons freshly squeezed lemon juice
- ½ green apple peeled and sliced
- Pinch of sea salt
- Freshly ground black pepper to taste
- 2oz / 60g rocket leaves
Method: Rub the pork fillets with wholegrain mustard. Heat the oil in a heavy-based pan and sear the pork fillets on high heat for 1 minute on each side or until brown.
Mix the apple juice, lemon juice, maple syrup, sea salt. Add the mixture to the pan. Reduce the heat, cover and simmer over low heat for 25 to 30 minutes or until the pork fillets are tender.
While simmering, turn the pork to ensure even cooking and spoon over the sauce. Add the apple slices to the pan for the last 10 minutes of cooking time. When the pork fillets are cooked, lift out from the pan. Boil the remaining liquid until thick and syrupy. After that, prepare the couscous

- 4 oz (125 g) couscous.
- ½ cup hot water
- 2 tablespoons extra virgin olive oil.
- 1 tablespoon freshly squeezed lemon juice
- Freshly ground black pepper, to taste
- A few sprig coriander
Method: Meanwhile, prepare the couscous. Put the couscous in a bowl, pour the hot boiling water over it. Stand for 5 minutes or until the water has been absorbed.
