Prawn Avocado Salad Ingredients
- ½ avocado
- 9 oz (280g) fresh largely cooked tiger prawn. Take out the heads, peel off the shell but leave the tails intact and devein
- 1 spring onion finely shredded lengthways.
- 3oz (90g) watercress removed the tough parts and washed carefully
- 1 shredded cucumber.
- ½ oz (15g) roast macadamia nut.
- 1 tablespoon Thai basil finely sliced
- ½ red chili shredded.
- 1 lemongrass sticks, very finely sliced
- 2 garlic cloves finely sliced.
- 1 tablespoon water.
- 1 tablespoon white vinegar.
- 20g castor sugar.
- ½ teaspoon salt.
Method: Combine shredded chili, sliced garlic, sliced lemongrass in a bowl. Stir in water, vinegar, sugar, salt. Set this pickles aside.
Fish Sauce Dressing Ingredients
- 3 tablespoon lime juice.
- 1 tablespoon fish sauce.
- 1 ½ tablespoon castor sugar.
- 1 garlic clove, finely chopped.
- ½ red chili, finely chopped,( optional)
Method: In a bowl: lime juice, castor sugar, chopped garlic, chopped chili and fish sauce. Stir well till all ingredients dissolved.
Before to serve,
Cut the avocado into half lengthways, remove the stone and cut in half again. Carefully peel off the outer skin, then cut the flesh into 3 long pieces. See the pictures
