Some main ingredients we needs for this tasty vietnamese meal
Rice flour cake dipping sauce
- 1/2 cup castor sugar
- 1/2 cup soy sauce
- 1/2 tsp salt
Bring all the ingredients to the medium heat, once it is hot, stir all of them till they are dissolved. Leave it aside
Carrot pickle for Vietnamese fried rice flour cake
- 1 pc carrot, cut very thin
- 1/2 cup white wine vinegar
- 1/2 cup water
- 1/2 cup castor sugar
Bring water, vinegar, sugar to the medium hot, sitr untill dissolved, leave it for about 30 mins. Once it cooled down, pour the mixture to cut carrot. Soak at least 2 hours before serving.
Vietnamese fried rice flour cake - bột chiên
- 34oz (1lt) water
- 17.6 oz (500gr) rice flour
- 3 tsp tapioca flour
- 2 tsp Knorr seasoning
- 1/2 tsp salt
- Cooking oil
Step 1: Place all ingredients to a bowl. Use a hand whisk or a pair of chopsticks to stir well till all come together, leave it to soak 2 hours
Step 2: Add a few drop of oils, mix again.Place all the mixture in the saucepan over medium heat, stir around till the mixture start to get thicken
Step 3: Pour the mixture into the greased round tin, mix well. Now going to steaming, once the water starts boiling, cover with the lid like picture underneath. Cook for approx 60-70 mins until cooked, checking by the skewer or chopstick comes out clean (if comes out dirty, means not cooked, so leave it stay back for another 5-10mins.
Step 4: Once the rice flour dough cooled down, tip it out of the tin.
Step 5: Cut the dough into small pieces (not too thick, not too thin). Do not cut all of them, just cut enough for serving. Otherwise, dough will come to very dry and hard (always wrapped up the rest of the rice dough)
Step 6: To fry, use a pan with a little of cooking on it, once the oil hot, place rice flour cake dough pieces in. After 3-4 mins, till the bottom dough pieces get golden brown color, turn dough pieces over and wait for another 2 mins. Crack 1-2 eggs in, sprinkle some cut spring onion. Once the egg cooked, your meal ready to serve with dipping soy sauce and carrot pickle.
Tips: I normally add some chili sauce to enhanced the flavour
When frying, you can leave it a bit longer to make dough more crunchy or in reverse way to make the piece of dough softer. It all depends on your preferences.
To serve, place some pickled carrot to the sauce or over your meal, very nice.
